I would like to become a chef. Some advice please?

Yes this is true of me but I am not normal...
I am 29 Have been cooking since I was at the of of 6 y/o... I mostly have been my beginnings were w/ French and Fr. Canadian foods, my mother is Fr. I love to cook in Asian/Indian, but also very educated in Mexican, So. American,German, Moroccan and Greek, I learn on my own as well as being taught by native teachers.. Everyone has told me for years to become a chef, but the only way into a Rest. is waiter, I can't I am horrible.
My situation - Well I have little to no Rest or proper culinary exp. What should be my first step..
PLEASE DO NOT SAY CULINARY SCHOOL...
That may happen down the line but I need to get into the field way before that is an issue.. I am aware that school is not a necessity but I may pursue that later just to add to my name..
I live in Houston so you can imagine most kitchen are full of Mex. immigrants that get paid little to nothing and also make the field competitive & hard to enter financially.

Some advice from a Chef preferred please.
