What are spices used in Moroccan cooking? ?

moroccan food
Branalista asked:

I'd like to make a moroccan dish, but I've never made any moroccan foods before. What spices do I need?

Do you have a recipe?

I don't want to use lamb -- I'd rather use chicken.

And cous cous? Do I need dried fruit?

Thanks!!!
FTR, I can google. Anyone can google. I'm looking for personal experiences.

Here is a chicken recipe you can make. I find that rosemary, cumin and paprika are good in Moroccan recipes. Dried fruit is not necessary. If you want more recipes, try googling Moroccan recipes and see what you find.

4 Pounds Chicken
2 1/2 Tablespoons Oil
2 Onions — sliced
Salt And Pepper — to taste
1/4 Teaspoon Ginger
1 Teaspoon Paprika
1 Onion — finely chopped
1/2 Pound Green Olives
1 Lemon Lemon Juice Picture

Preparation:
Heat the oil in large sauce pan. Add 3/4 cup water gradually. Add onion slices, sprinkle with spices. Lay chicken on top. Cook over low heat, covered, one hour. Add finely chopped onion. Cook for another 1/2 hour. Place pitted olives in pan of cold water, bring to boil for 1 minute. Drain water. Add olives to pan. Cook for 5 minutes. Just before serving squeeze on lemon.

Serving Ideas : Serve with rice or couscous

Those are some of the Moroccan spices.

And you can find some recipes here;

Look at the ratings and the reviews, and you'll know which one is better or more delicious. :-)
And these are the recipes for couscous;

I haven't tried any of it, so I can't really recommand any of it to you, but again you can know which one is good from the ratings and the "stars".

Enjoy! :-) ^^^^^^^^
